Yummy Cake (you pick the flavour)
This cake is pretty easy to make.  Its a recipe I got off my mum, that she pulled from a magazine sometime.  You can add cocoa (2 T) if you want chocolate, or coffee, or even a few blueberries or a mashed banana to the mix.  I made this one with lemon zest and lemon buttercream icing.
200g caster sugar
200g butter softened
4 eggs beaten
200g self-raising flour
1 teaspoon baking powder
2 tablespoons milk

Set oven to 190c (or 170c if you have fan-bake).  Line 2 x 20cm round cake tins.  In a large bowl beat all ingredients together with electric beaters till smooth.  (The batter is quite thick).  Divide between the tins.   Bake approx 20 min until golden and top of cake springs back when touched.  Cool on racks.  Ice!!  SHARE!




Lentil Dahl
This dahl was super easy!  Not the most photogenic dish, but that's ok. I thought it was quite tasty, but you would have to like the taste of red lentils.  We just had it with some rice, and this was a rather plain meal.  Next time I might serve it with some natural yoghurt and maybe add a bit of chilli or something.  Might also be nice with some spinach in.  But true to my word I made it exactly as the recipe said.  This is a recipe I have had for ages,  so unfortunately I don't know where its originally from. 
250g split red lentils
1 large onion chopped
1 bay leaf
1/2 teaspoon turmeric
1 tablespoon fresh grated ginger
2 teaspoons ground cumin
2 teaspoons ground coriander
3 cloves garlic, crushed
Juice of 1 lemon
Method:  Put the lentils into a large pot with the onion, bay leaf, turmeric, ginger and 900ml water.  Bring to the boil and simmer for 20min until the lentils are tender and pale.  Remove and discard the bay leaf.  Put cumin and coriander into a small pan and heat for a minute or so until they become aromatic.  Add the spices to the dahl.  Now add the crushed garlic and lemon juice.  Taste and add salt and pepper to suit your taste. (I added quite a bit of salt here.)  Easy!! And its totally fat-free, not even any oil!!
